A one shoulder dress creates a problem that a fully strapless one does not. Strapless is symmetrical, so you take both straps off and the outfit reads as intended. One shoulder is asymmetric: the dress covers one side and leaves the other bare, so an ordinary bra shows exactly one strap, which looks less like a styling choice and more like an accident. The fix is either to remove both straps or to route a single strap under the side that is covered.
Why the covered side is the deciding factor
Look at the dress on a hanger and ask what the covered shoulder actually covers. A wide asymmetric panel that runs from the neck across the shoulder and down the upper arm gives you somewhere to hide a strap. A thin diagonal band, a rope tie, or a cold shoulder cut with a gap does not, and anything you run underneath will show at the edges.
The bare side matters too. Some one shoulder dresses keep a full bodice and just remove one strap, which is the easy case. Others cut away under the bare arm or drop the back, which takes the band out of play and moves you into adhesive territory.

Can you wear a convertible bra with one strap?
Sometimes, and it is worth checking rather than assuming. A convertible bra becomes useful here only if two things are true: the straps genuinely detach at both ends with rings or hooks, and the covered panel of the dress is wide enough to hide the strap along its whole run from cup to back. Plenty of bras sold as convertible only convert to racerback and cannot be worn one sided at all.
There is a comfort cost even when it works. A single strap carries the load that two normally share, so it digs in more, and it tends to creep towards the neck over an evening. That is tolerable at smaller cups and gets less so as size goes up. If you find yourself adjusting it in every photograph, the strapless or adhesive route is the better trade.
When is a strapless bra enough?
Whenever the dress keeps its back and its sides. The neckline is doing nothing that a strapless bra cannot handle, and you get a proper band, which is still the most comfortable support available. Where a strapless bra runs out is the moment the dress opens at the back or scoops out under the bare arm, because that is where the band lives.
When to switch to a stick-on bra
When the band has nowhere to go. Hold the dress against you before the day and check where the fabric ends on the bare side. If the cut goes high under the arm, the cup edge needs to sit inside it. When tape is the better tool
When the dress is deep at the front as well as bare on one shoulder, or when the cut is unusual enough that no fixed cup shape fits inside it. Tape has no predetermined footprint, so strips cut from the 5 metre roll go where the fabric is and stop where it is not. On an asymmetric dress that usually means taping the two sides differently, which feels strange the first time and is exactly right: the garment is not symmetrical, so the support underneath it does not need to be either.

What if you wear a bigger cup?
Prioritise the options that keep a band. A one shoulder dress with a full back is genuinely friendly to larger cups, because a well fitted strapless bra is still available to you and it will be more comfortable across an evening than anything adhesive. Take that option when the dress allows it.
When the dress does not allow it, expect shape and a modest lift from adhesive rather than the held feeling of a banded bra, and let the garment help: a structured bodice with boning or a firm lining carries part of the weight.
